This is a great spin on a traditional recipe that is always good any holiday, summer, spring and winter. A staple side dish and certainly one of the South’s favorite. I came up with the idea one day when I was catering for a party and realized that I was out of relish, a staple ingredient for potato salad. With no time to go to the store I surveyed my cabinet of gourmet items, usually saved for specialty dishes. As a Chef, I love experimenting with new and different ideas to change up traditional recipes. So as I eyed the cabinet contents I spotted a little jar and that was my Eureka moment! It turned out to be an amazing addition, giving the salad a unique flavor that everyone loved!! Never be afraid to put your creativity to work!
