I was baking in our DHEC approved kitchen at the Hope Center in Aiken, when I got an alert on my phone about a stay at home ordinance. I didn’t put much thought into it at the time. Baking is a form of relaxation for me and I love the experience of people enjoying the food I have prepared out of my labor of love. Kathy called but I let it go to voicemail as I was cleaning up the kitchen.

I started packaging my delivery orders and called her back. She wasn’t in the best of moods I could tell by her voice.

“Hey whats going on, just finishing up the last order we had.”

“Hey this will be the last order for a while, sigh.”

“Huh, what’s this ordinance about? I hear Trump talking about alot but I haven’t really given any thought into it.

“We are officially in a pandemic, and its being mandated by every state.”

My heart sank and everything in our world came to a halt. I couldn’t be sure about anything, I had a million questions with no answers. This was the time I had to center my thoughts and emotions. We were finally in the phase of entering several convenient stores. All production was to be on pause and left up in the air.

Even though this experience was devastating at that moment, I just knew everything would be changing for the better once the dust settled. Imagine an entrepreneur working everyday, making financially doing well with wonderful prospects: then it all stops.

2020 was a year that I feel flipped every small business on their head. But with every obstacle comes new opportunity. In late 2017 we started Energy Lives Infinite Media Enterprises, a small collective of creative film makers in the local area. Helping those with little to no experience from all ages because I have always believed the first step in anything is to just do it. So we did. Even though the pandemic stopped our productions for the remainder of the year we vowed not to let our creators down. I got in touch with everyone we had worked with and let them know how we now planned to present their work.

And here we are now in 2021 sharing our creations with you all (viewers)! Currently, we are building and defining our new list of Mad Yum favorites that will be sold online here. Until then we will leave our amazing and supportive community of Mad Yummers with some of our signature recipes so that you can make and enjoy them at home.
